Key recipe: Chili pepper flavoured oil Frantoio Bitetti

Ingredients for 4 people

Desalted cod gr. 400

Tomato sauce gr. 100

 Cruschi peppers gr. 50

Wild chicory gr. 100

Walnuts gr. 4

Salt q.b.

Chili Pepper Flavoured Oil q.b

 

Preparation

Cook the cod steaks in cooking oil by immersing them in extra virgin olive oil at a temperature of 70 ° C for 15 minutes. In the meantime, put a drizzle of chili peppers flavoured oil in a saucepan, add the tomato sauce and season with salt. Then add part of the cruschi peppers at our disposal (previously fried in the classic way) and let it cook over low heat. Once the mixture is cooked, blend everything. Boil the chicory, drain and sauté them in a pan with a little pepper oil. Place the plate on the plate, add the cod steak, add the sautéed chicory, the remaining crusco pepper and finally the walnut kernels. Finish with a drizzle of chilli peppers flavoure oil.
